Crunchy Apple Pie

1/2 c. sugar
3 Tbls. all-purpose flour
1 tsp. ground cinnamon
1/8 tsp. salt
6 c. sliced, peeled and cored apples
1 Pie crust for single crust pie (frozen pie crust works)
1/2 c. chopped pecans
1/4 c. caramel ice cream topping

Crumb topping

1 c. brown sugar
1/2 c. all-purpose flour
1/2 c. quick-cooking rolled oats
3-4 Tbls. butter


Pre-heat oven to 375°F. To prepare crumb topping, stir together the first three ingredients. Cut butter or margarine with a pastry cutter or fork until it resembles coarse crumbs. Set aside

For non-frozen pie crusts. Roll out dough to a 12 - inch circle. Transfer dough to a 9 - inch pie pan being careful not to tear or stretch dough. Form edge to your liking.

In a bowl combine sugar, flour, cinnamon and salt. Add apple slices and toss gently to coat. Transfer apples to pie crust. Sprinkle crumb topping over apples.

To prevent over-burning, cover the edge of the pie with foil. Bake for 25 minutes, remove foil and bake for 20 to 25 minutes more. Remove from oven, sprinkle with pecans and drizzle with caramel. Serve with ice cream or whipped cream if desired.
